Cold Blueberry Pie
1 stick butter, melted
1 cup flour
1/2 cup sugar
6 cups blueberries
1/2 cup cornstarch
1 Tbsp. lemon juice
1/2 cup water
1 small tub cool whip
For the crust, mix flour, sugar and butter together.
Press into a pie pan and bake at 350 until lightly
Cook in a sauce pan 2 1/2 cups water and 2 cups
blueberries until it boils. In another bowl add 1/2
cup water, lemon juice and cornstarch. Add to
mixture on stove. Stir until thickened. Remove
from heat. After cooled, add remaining berries.
Pour over baked crust. Top with Cool Whip.
