French Macaroon Pie
15 saltne crackers
14 dates, cut fine
1 cup sugar
1/2 cup chopped pecans
1 tsp. almond extract
3 egg whites, beaten stiff
Crush crackers until fine. Add dates, sugar,
pecans, and almond extract. Mix well, then fold in
stiffly beaten egg whites. Put into buttered 8-inch
pie pan and bake at 300 degrees for 45 minutes.
Serve cold with whipped cream.
