3 cups fresh gooseberries
1 1/2 cups sugar
3 Tbsp. tapioca
1/4 tsp. salt
2 Tbsp. butter
2 - 9 inch pie shells
In a saucepan crush 1/2 cup of the gooseberries;
combine with sugar, tapioca, and salt. Add the
whole berries. Cook and stir till mixture thickens.
Dot pie crust with butter.
Pour berry mixture in pie crust.
Bake at 450 for 10 minutes; reduce temperature
to 350 and bake about 30 minutes longer or till
crust is done.
