    Pumpkin Chiffon Pie

    Ingredients

    3 egg yolks, beaten
    3/4 cup brown sugar
    1 1/2 cup pumpkin
    1/2 cup milk
    1/2 tsp. salt
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    1 envelope gelatin, unflavored
    3 egg whites
    1/4 cup sugar
    1 9-inch pie shell

    Directions

    In heavy saucepan, mix together beaten egg yolks,
    brown sugar, pumpkin, milk, salt, cinnamon, and
    nutmeg; cook till thick, stirring frequently.  Dissolve
    gelatin in cold water; add to pumpkin mix; cool
    mixture.  
    Beat egg whites till stiff; add sugar.
    Fold into pumpkin mixture.
    Pour into pie shell and chill.
